Ingredients

  • ¾ cup granulated sugar
  • ¾ cup water
  • 4 large eggs
  • 1 can evaporated coconut milk (12.2 fl oz/360ml)
  • 1 can condensed coconut milk (11.25oz/320g)
  • ½ vanilla bean (about 2 inches long, seeds scraped)

Instructions

  • Preheat your oven to 338°F (170°C). Bring a pot of water to a boil, then turn off the heat and keep it covered to maintain warmth for your water bath.
  • In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture turns a rich golden brown and thickens into a caramel. Keep a close watch and gently swirl the pan to ensure even cooking. Carefully pour the hot caramel into an 8-inch round baking pan and immediately tilt the pan to evenly coat the entire bottom surface. Be extremely cautious as the pan will become very hot. Place this round baking pan into a larger baking pan (a 9-inch square pan works well) and set it aside.
  • While the caramel is cooling and setting in its pan, prepare the creamy custard. In a mixing bowl, combine the large eggs, evaporated coconut milk, condensed coconut milk, and the fragrant seeds scraped from the vanilla bean. Gently whisk all the ingredients together until the mixture is smooth and fully combined, making sure not to create excessive foam. Set this custard mixture aside to rest briefly while the caramel finishes cooling.
  • Carefully pour the rested custard mixture through a fine-mesh sieve directly over the cooled caramel in the round pan. This step is essential for a silky-smooth texture. Cover the round pan tightly with aluminum foil. Next, very carefully pour the hot water (from the pot you prepared earlier) into the larger baking pan, around the outside of the foil-covered round pan, until the water reaches about halfway up the sides of the inner pan. Place the entire setup into your preheated oven and bake for 50 to 60 minutes, or until a toothpick or knife inserted into the center of the flan comes out clean.
  • Once baked, remove the flan from the oven and let it cool completely to room temperature. This is a crucial step for setting. After it has cooled, transfer the flan to the refrigerator and chill it for at least two hours, or preferably longer (up to overnight), to ensure it is thoroughly set. Before serving, run a thin knife carefully around the edge of the flan to loosen it from the pan, then invert it onto a serving plate. Slice and enjoy your delightful dairy-free leche flan!
